8 TBSP butter or soy margarine
3/4 cup organic sugar or Sucanat
1 cup organic flour(or King Arthur’s)
1 tsp baking soda
1/2 tsp sea salt
1 cup organic whole wheat flour(or King Arthur’s)
3 large ripe bananas, mashed
1 tsp pure vanilla
1/2 cup shelled walnuts, coarsely chopped
Preheat oven to 350*. Grease 9X5X3″ bread pan. Cream butter and sweetener until light and fluffy. Add eggs one at a time, beating well after each addition. Sift white flour, baking soda, and salt together, stir in whole wheat flour, and add to the creamed mixture, mixing well. Fold in bananas, vanilla, and walnuts. Pour mixture into the pan, and bake for 50 to 60 minutes or until a cake tester comes out clean in the pan for 10 minutes, then on a rack. Makes one loaf.
Chocolate Coconut Brownies
3/4 tsp sea salt
1 1/8 cup organic white flour(or King Arthur’s)
1/3 cup unsweetened cocoa powder
2/3 cup Sucanat
2/3 cup organic sugar
1/2 cup organic chocolate chips
1/2 cup unsweetened coconut
1/2 cup walnuts
3 large egg(preferably organic)
1 tsp vanilla Extract
2/3 cup unsweetened applesauce
Preheat oven to 350*. Grease 11X7″ greased pan for 32-37 minutes or 9X9″ greased pan for 27-32 minutes. Set aside. Place all ingredients in a bowl and mix until completely combined. Pour into pan. Cook for a specified time or until the cake tester comes out clean. Cool on the rack before cutting.
